Our Story
LatinA Flavor Café & Catering was born in June 2025 as a response to a request for proposals by Anythink Libraries to operate the café inside the library in Thornton, Colorado.
We are a proud 100% Latinx family-owned business dedicated to sharing and celebrating the diverse Hispanic cultures through authentic food and heartfelt service.
Who We Are
Led by Karen and Odila Colato, owners of Sívar Café, and Melba Velázquez, owner of Tres Leches Treats, our team combines years of culinary passion and community dedication.
We are three independent businesses united by a shared vision to bring authentic Salvadoran and Caribbean flavors to Thornton’s vibrant community.
Our Mission
Our mission is to deliver consistency, quality, and satisfaction in every product and customer experience. We strive to be more than just a café — we are a cultural hub that honors culinary heritage and fosters community connection in Thornton.
What We Offer
We specialize in authentic pupusas and Caribbean dishes, complemented by traditional desserts like flan, tres leches, guava cookies, and gluten-free options. We also provide adaptable catering services for events of all sizes with sensitivity to dietary needs.
Our Commitment
With strong roots in family traditions and entrepreneurship, our commitment extends beyond food. Odila Colato, one of our owners, completed a business acceleration course at Mi Casa Resource Center, emphasizing our dedication to growth and community engagement in Thornton.
Meet the team
Odila Colato
Never forget where we come from, always remember our roots, looking forward, with pride, strength, and a lot of faith! My name is Odila Amalia Colato, and I’m from El Salvador, the smallest country in Central America and the Americas. I am 46 years old and the oldest of four siblings. I studied accounting, law, and dance but always had a passion for cooking. I emigrated to the United States 10 years ago with the support of my family. Together with my sister Karen, I started a small business selling traditional Salvadoran food. Today, I manage the café with a deep commitment to sharing our culinary heritage and serving the Thornton community.
Karen Colato
Karen is a co-owner of LatinA Flavor Café and, along with her sister Odila, has been passionate about bringing authentic Salvadoran dishes to life.
With a background rooted in family traditions and years of experience in the food industry, Karen works closely with the team to ensure every dish meets the highest standards.
She believes food connects culture and community, and is dedicated to maintaining consistency and quality in every pupusa and treat served at the café.
Melba Velázquez
Melba is a proud Latina entrepreneur and founder of Tres Leches Treats. She brings her expertise in desserts and a passion for traditional flavors to LatinA Flavor Café & Catering. Melba grew up embracing her Puerto Rican heritage, and her goal is to share those nostalgic tastes with the Thornton area. She is deeply committed to community engagement and believes in nurturing business growth with heart and soul, reflecting the spirit of LatinA Flavor in every creation.
